Instant Pot Salsa Chicken

4 simple ingredients is all you need for this quick and easy Instant Pot salsa chicken. Juicy tender chicken drenched in a mild tomato based salsa perfect for a weeknight dinner.

Ingredients
  

  • ¾ cup chicken broth
  • 2 pounds boneless skinless chicken thighs
  • 16 ounces salsa
  • 3 tablespoons taco seasoning

Instructions
 

  • Set the Instant Pot to saute. This helps speed up the time to build up pressure as it heats up quicker.
  • Pour chicken broth in the Instant Pot insert. Place a trivet and then a steamer rack into the insert. This makes for a more juicy chicken. If you do not have these you can omit them.
  • Lay chicken in the steamer rack. Pour over the salsa and taco seasoning. Stir to combine. Cover and set to sealing. Cook on manual high pressure for 15 minutes. Allow 10 minutes natural pressure release.
  • Remove the trivet and steamer rack. Place the chicken and salsa into the chicken broth. Shred with two forks or a meat shredder. Cool slightly and ENJOY.
