Girrrrl (or booooy) if you don’t have an Instant Pot you better get yourself one. The Instant Pot has been taking over countertop kitchen appliances for the last few years. The Instant Pot is an electric pressure cooker. I know, I know pressure cooker sounds soo scary, but believe me this thing is amaze-balls!

What can the Instant Pot do?

The Instant Pot can make cooking 2-6x faster and uses 70% less energy. It can pressure cook, slow cook, keep warm, make rice, and even make yogurt. Just do yourself a favor and go get one. You can thank me later.

Don’t have an Instant Pot? It’s ok. You can make this in Crock Pot. Cook on low for 8 hours or high for 4 hours. You could also bake or cook on the stove.

What type of salsa works best for Instant Pot salsa chicken?

You really can use any type of salsa you want. I have two young children at home so I make mine a mild one. Feel free to spice it up with a hotter variety, use green chile salsa, really whatever your favorite salsa is would work well.

How to store Instant Pot salsa chicken?

Once cooled, you can store the chicken in an airtight container in the fridge for 3-4 days.

Can you freeze Instant Pot salsa chicken?

You betcha. You can store the chicken in an airtight container in the freezer for 4-6 months. If you’re looking for meal prep options you can pre wrap your salsa chicken in tortillas and individually wrap in foil and store in the freezer. When it’s time to reheat you can defrost in the refrigerator overnight and then microwave or place in the toaster oven to warm up and crisp up.

How to make Instant Pot salsa chicken?

Set the Instant Pot to saute. This helps speed up the time to build up pressure as it heats up quicker. Pour chicken broth in the Instant Pot insert. Place a trivet and then a steamer rack into the insert. This makes for a more juicy chicken. If you do not have these you can omit them. Lay chicken in the steamer rack. Pour over the salsa and taco seasoning. Stir to combine. Cover and set to sealing. Cook on manual high pressure for 15 minutes. Allow 10 minutes natural pressure release. Remove the trivet and steamer rack. Place the chicken and salsa into the chicken broth. Shred with two forks or a meat shredder. Cool slightly and ENJOY.

  • 2 pounds boneless skinless chicken thighs
  • 16 ounces salsa
  • 3 tablespoons taco seasoning
