Ingredients
  

  • ½ cup neutral oil
  • 1 tablespoon achiote seeds

Instructions
 

  • Pour oil into a medium pot over medium heat.
  • Add achiote seeds. Heat oil until seeds begin to sizzle and the oil beings to turn an orange-red color.
  • Take the oil off the heat and allow to cool.

Notes

Tips for Success

  • Do not overheat the seeds. They turn bitter if burned.
  • Remove the pot from the heat as soon as the color releases.
  • Always strain the seeds, otherwise the oil can become gritty.
  • Cool fully before storing to prevent condensation.
  • Make a double batch and keep it on hand. It’s a huge time-saver.
