What is ube?
Ube, also known as purple yams, are popular in desserts in Hawai’i and the Philippines. Its taste is described as nutty with a hint of vanilla.
Where can I find ube?
Fresh ube is hard to find in Hawai’i and across the US. An alternative of ube jam or a powdered form can be found at many local grocery stores. You can also purchase this on Amazon as well.
Flavored butters have been quite popular lately. This is another flavor to add to your arsenal.
Although called butter, this is more of a spreadable butter consistency. You can spread it over toast, waffles, pancakes, and bagels.
Ube butter ingredients
- 2 eggs
- 1/2 cup granulated sugar
- 1/4 cup ube jam
- 1/2 teaspoon ube extract
- 6 tablespoons unsalted butter, cubed
How to store ube butter?
Once the butter has finished cooking it should be placed in sterilized canning jars and covered with a lid. It can then be cooled at room temperature before placing in the fridge to chill.
How long does ube butter last?
Ube butter will last about a week in the refrigerator once opened.
Can you freeze ube butter?
Yes. The butter will last about 4 months in the freezer. When ready to use defrost in the refrigerator overnight.

How to make ube butter?
Place heat-proof bowl over a pot of boiling water, being careful not to let the bowl touch the water, to create a double boiler.
Add eggs and sugar. Stir to combine.
Then add in ube jam and ube extract and continue to stir.
Once well combined add butter. Continue to stir until liquid begins to thicken and able to coat the back of a spoon or about 10-15 minutes.
Pour into sterilized jars and cover with the lid.
Let cool at room temperature. Once cooled, place in the refrigerator.
