Some + more = s’more and this is where the classic name came from. No one seems to know who invented s’mores, but it said that it first appeared in a cookbook in the 1920s. And boy am I happy it did.
I mean who doesn’t love a yummy s’more made with buttery graham crackers, decadent chocolate, and sweet marshmallows toasted over a campfire? Don’t have a campfire? Not to worry.
Call in baked s’mores bars. That’s right, no campfire needed. Just a few simple ingredients, an oven, and you’ve got yourself a finger licking good dessert.
I mean I’m such a sucker for sweets. Everything from macadamia nut ice cream to andagi, and liliko’i bars to mochi donuts. You name it, I probably love it.
And this recipe is no different. Give me all the s’mores bars.
Ingredients for s’mores bars
- Maika’i Organic Graham Bears. A delicious change up from your classic graham cracker. You can pick this up at your local Foodland.
- Melted unsalted butter. This will act as the binding agent to help form the buttery crust.
- Vanilla extract. Pick some up at the store or make your own homemade vanilla extract
- Granulated sugar. If you want to limit the added sugar you can omit this, but it just tastes so good.
- Mini marshmallows. After all, you can’t have s’mores without marshmallows, right. I like to use the mini ones, but if all you have are the regular size ones those can work as well.
- Semi sweet chocolate chips. Using semi sweet helps balance out the sweetness. You can always use dark chocolate or milk chocolate if you wish.

S’mores bars are best kept in an airtight container at room temperature.
How long does it last?
This s’mores bar recipe will keep for 4-5 days in an airtight container at room temperature.
Can you freeze s’mores bars?
S’mores bars can be placed in an airtight container and kept in the freezer for up to 3 months.
How to reheat?
These dessert bars are best brought out of the freezer and placed in the refrigerator to defrost. It can then be reheated in the toaster oven or the microwave. Do note that freezing and reheating can change the texture of these bars.

How to make s’mores bars?
- Preheat oven to 350F.
- Using a food processor, blend Maika’i Organic Graham Bears into a fine crumb.
- Pour graham crumbs into a bowl. Add vanilla to the butter, then pour into the graham cracker crumbs. Next add the sugar. Mix until well combined.
- Spread the graham cracker mixture evenly into a greased 8×8 baking dish patting it down to form a crust.
- Bake for 10 minutes or until golden brown.
- Remove the pan from the oven and pour 2 cups of marshmallows and the chocolate chips over the crust.
- Return to the oven and bake for another 10 minutes or until the marshmallows have melted.
- Remove the pan from the oven and pour over the remaining marshmallows.
- Set the oven to broil, place the pan back in the oven, and broil for 1-2 minutes or until the top layer of marshmallows have become toasted.
- Cool completely and ENJOY!

- 2 ½ cups mini marshmallows divided
- 1 cup semi sweet chocolate chips
Instructions
- Preheat oven to 350F.

- Set the oven to broil, place the pan back in the oven, and broil for 1-2 minutes or until the top layer of marshmallows have become toasted.
- Cool completely and ENJOY!
