Breakfast meal prep made easy with these sheet pan pancakes. Customize it to even the pickiest eaters liking.
Warm, fluffy, goodness baked on a sheet pan and topped with all your favorite go-tos. What else could be better on a busy weekday morning as you’re trying to make it out of the house on time with kids. Kids and on time really never are in the same sentence.
Pancakes are one of my favorite breakfast items. I’m a fan of the sweet goods like pancakes, french toast, waffles for breakfast. My husband, on the other hand, is the meat eater for breakfast kind of guy.
Another quick breakfast item that you can meal prep ahead of time is yogurt. Here’s a great homemade yogurt recipe made in the Instant Pot.
Pancakes classically are thin, round cakes cooked on a griddle and served with various toppings. This is sometimes time consuming to stand at the stove and cook one by one, especially when cooking for a large crowd.
Waste time no more, in comes sheet pan pancakes. Cook a whole sheet pan worth of the yummy goodness in just 15 minutes. Add desired toppings as you choose and satisfy everyone’s morning hunger.
You can make these from scratch as this recipe does or use your favorite boxed brand. I really like Bisquick.
This recipe uses vanilla. Check out my homemade vanilla made in the Instant Pot.

How to store pancakes?
Sheet pan pancakes will keep in an airtight container in the refrigerator for up to five days. Perfect to meal prep at the beginning of the week and enjoy throughout the week.
Can you freeze sheet pan pancakes?
You sure can. Place in a zip top bag and freeze for up to 2-3 months. If you place the pancakes individually on a sheet pan and slightly freeze, then place in zip top bag for long freezing, that will help prevent the pancakes from sticking to each other.
