Ingredients for pumpkin spice scones
(Full recipe instructions and ingredient amounts are in the recipe card at the bottom of this post)
For the scones
- Flour. All purpose flour works well. You can opt to use another flour here if you’d like.
- Baking powder. This will give your scones the leavening and rise.
- Pumpkin pie spice. Use store bought or homemade.
- Salt. Salt helps to bring out the flavors.
- Unsalted butter. If you only have salted butter, omit the extra added salt.
- Brown sugar. Light, golden, or dark brown is fine. The darker the sugar the more molasses flavor.
- Heavy cream. This gives the scone a moist rich flavor.
- Egg
- Vanilla extract. Use store bought or make your own homemade vanilla extract
For the glaze
- Powdered sugar
- Milk
- Vanilla extract.
How to make pumpkin spice scones?
- For the scones: Preheat the oven to 400F.
2. To a large bowl add flour, baking powder, pumpkin pie spice, and salt. Whisk until well combined.
3. Grate the frozen butter into the dry mixture. Use a pastry cutter or fork to combine and set aside.
4. To another bowl add pumpkin puree, sugar, heavy cream, egg, and vanilla extract. Mix until well combined.
5. Pour the pumpkin mixture into the flour mixture. Mix until combined. Use your hands to knead the dough until it comes together.
6. Dust your tabletop with flour. Pour the dough out and shape into a disc shape about 1 inch thick. Using a bench scraper or knife, cut into 8 triangles.
7. Place the scones on a greased cookie sheet allowing space between each.
8. Bake for 18-22 minutes or until lightly browned.
9. Remove from the oven and allow to cool completely.
10. For the glaze: To a bowl add powdered sugar, milk, and vanilla extract. Mix until smooth.
11. Once the scones have cooled drizzle the glaze over the top and ENJOY!
Tips for delicious pumpkin scones
- Use cold butter. Freeze your butter and grate into fine pieces. This allows the butter to be evenly distributed in the dough and create the most flaky scones.
- If you are using homemade pumpkin puree, you may need to drain out some of the excess liquid prior to mixing the dough.
- If you find your dough is too sticky, add flour in 1 tablespoon increments until you get the desired consistency.
- Don’t over mix your dough. Mixing flour causes gluten strands to form. Overmixing will create excess gluten strands and make the scones tough.
