For the scones

  • Flour. All purpose flour works well. You can opt to use another flour here if you’d like.
  • Baking powder. This will give your scones the leavening and rise.
  • Pumpkin pie spice. Use store bought or homemade.
  • Salt. Salt helps to bring out the flavors.
  • Unsalted butter. If you only have salted butter, omit the extra added salt.
  • Brown sugar. Light, golden, or dark brown is fine. The darker the sugar the more molasses flavor.
  • Heavy cream. This gives the scone a moist rich flavor.
  • Egg
  • Vanilla extract. Use store bought or make your own homemade vanilla extract

For the glaze

  • Powdered sugar
  • Milk
  • Vanilla extract.

Tips for delicious pumpkin scones

  • Use cold butter. Freeze your butter and grate into fine pieces. This allows the butter to be evenly distributed in the dough and create the most flaky scones.
  • If you are using homemade pumpkin puree, you may need to drain out some of the excess liquid prior to mixing the dough.
  • If you find your dough is too sticky, add flour in 1 tablespoon increments until you get the desired consistency.
  • Don’t over mix your dough. Mixing flour causes gluten strands to form. Overmixing will create excess gluten strands and make the scones tough.

FAQs

  • Scones are best eaten fresh. You can store leftovers in an airtight container at room temperature. These will keep for 3-4 days. For a longer shelf life scones can also be stored in the refrigerator for up to a week.
  • Can you freeze pumpkin scones?
  • Yes. Allow scones to cool completely. Place in a zip top bag or airtight container. Be sure to get the air out to prevent freezer burn. This will keep for up to 3 months.

  • Scones that are at room temperature or in the refrigerator can be reheated in the microwave or oven. Frozen scones should be defrosted in the refrigerator overnight and can be reheated in the microwave or oven.
