Halloween Peanut Butter Balls

Peanut butter balls are an easy, no bake recipe that can be made with just 6 ingredients. Smooth, creamy peanut butter filling covered in delicious chocolate. Perfect to customize for your favorite holiday.

I mean anything covered in chocolate is amazing right? Right! And this is no different. Bite sized pieces of goodness rolled up and dipped into yummy chocolate.

A simple recipe that would be great with the kids. Don’t have kids? I’m sure you could borrow the neighbors kids. Best yet the messy, homemade look works perfectly here.

These are also known as peanut butter truffles and are great to make ahead and grab and go as you need.

Let’s talk ingredients. You’ll need:

  • Maika’i peanut butter honey and macadamia nut. It’s best to use creamy peanut butter. Crunchy peanut butter doesn’t hold its shape well and can become dry and crumbly.
  • Unsalted butter. You can use salted butter here if you wish, just omit adding the extra salt.
  • Vanilla extract. You can make your own with this homemade vanilla extract recipe.
  • Salt. This helps balance the sweetness.
  • Powdered sugar. This is used as a binder and helps the peanut butter hold its shape.
  • Chocolate candy melts. You can also use baker’s chocolate here.
  • Optional for decoration: sprinkles, candy eyes

Chocolate can be quite temperamental, however with a little bit of practice you can make some amazing things.

Here are some tips for melting chocolate:

  • Use the defrost setting on your microwave in short increments to prevent scorching your chocolate.
  • You can also use a double boiler made by placing a heat proof bowl over a pot of lightly simmering water. Be sure the water does not touch the bowl.
  • Water and chocolate are not friends. Be sure your bowl is clean and dry.
  • If your chocolate is just not getting as thin as you like, you can add some Crisco or Paramount crystals to thin it out.

Are chocolate peanut butter balls gluten free?

Yes. Pure chocolate and peanut butter are both naturally gluten free.

Can I add mix-ins to the filling?

Of course. Some yummy options are

  • Rice krispies
  • Oats
  • Coconut flakes
  • Protein powder

How to store peanut butter balls?

These are best kept in an airtight container in the refrigerator for up to a week.

Can peanut butter balls be frozen?

Yes. Place in an airtight container and it will keep for up to three months.

Troubleshooting tips:

  • Chocolate is hardening too quickly. The peanut butter balls are chilled in the refrigerator prior to dipping. The cold from the peanut butter balls will make the melted chocolate cool quickly. It’s best to dip one peanut butter ball at a time and work quickly. If your chocolate hardens up too much, you can remelt it in the microwave again.
  • Peanut butter balls are sweating. Once you remove the peanut butter balls from the refrigerator it will begin to cool and create condensation. Water and chocolate do not mix well. Use a paper towel to soak up the excess water before dipping.

How to make Halloween peanut butter balls?

To a large bowl add peanut butter, butter, vanilla, and salt.

Mix until well combined and smooth.

Then add half of the powdered sugar and mix until incorporated.

Add the remainder of the powdered sugar and mix until well combined. The mixture will be slightly crumbly.

Next take a small cookie scoop and scoop about 1 tablespoon of the peanut butter mixture and roll into a ball. Place the ball on a sheet pan lined with parchment paper.

When all the peanut butter mixture has been used, place in the refrigerator for 30-60 minutes.

About 10 minutes prior to the peanut butter balls being complete, begin melting the chocolate chips.

This can be done with a double boiler or heat in the microwave on low heat in 30 second intervals, stirring between, until melted and smooth.

Remove peanut butter balls from the freezer. Individually dip the balls in the melted chocolate until completely coated. Place back on the tray to harden.

While the chocolate is wet, adhere candy eyes and add sprinkles to make your peanut butter ball look like a monster.

Allow to completely cool and harden and ENJOY!

Notes

*Creamy peanut butter works best for this recipe. Crunchy peanut butter does not hold its shape well.
*You can make the peanut butter balls a day in advance and keep in the refrigerator until ready to dip in chocolate.
*Completed monster peanut butter balls will keep in the freezer for up to 3 months.
*Do not use chocolate chips for this recipe as it tends to not melt smoothly.
