Well, just that. Cookies that are made with pancake mix. No need to get out all the separate dry ingredients and measure it. Get your pancake mix and whip up these delicious cookies.
Another hack is to make cookies using brownie mix.
Ingredients for pancake mix cookies?
- Brown sugar. Brown sugar has a higher moisture content than granulated sugar, making sure these cookies are nice and moist.
- Softened unsalted butter
- Egg
- Vanilla extract. Check out my homemade vanilla extract recipe.
- Maika’i Buttermilk Pancake Mix
- Optional: black and orange candy melts
The fun thing about these cookies are the customization options. The options truly are endless. This recipe will be using black and orange candy melts to create a Halloween theme, but you can totally decorate them as you wish.

Can I make the batter ahead of time?
The great thing about these cookies is that you can make the batter ahead of time and store it in an airtight container in the refrigerator for a day or two and bake them up as you wish.
Can you freeze pancake mix cookie dough?
Another great way to prep this ahead of time is to make the dough ahead of time and freeze until ready. This dough will keep for 2-3 months in an airtight container.
How to store pancake mix cookies?
Once cookies are completely cooled you can store in an airtight container or zip top bag at room temperature for 4-5 days.

How to make pancake mix cookie bars?
- Pre heat oven to 350F.
- Add brown sugar and butter to a bowl. Using a hand mixer, mix until smooth. Then add egg and vanilla extract. Continue to mix until everything is well combined.
- Next add Maika’i buttermilk pancake mix and mix until well combined.
- Spray an 8×8 or 9×9 baking dish with non-stick cooking spray. Place cookie dough in pan. Wet hands and evenly spread dough in pan.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- Remove from oven and allow to cool completely.
- Once cool, melt candy melts in 15 second intervals until melted, and drizzle over the top. ENJOY!

I got a food service sized box of pancake mix from a food box a while ago, how many cups of the pancake mix should I use to make the pancake mix cookies
Hi. 1 3/4 – 2 cups ish. It’ll depend on the pancake mix itself. You’ll have to adjust accordingly.
