Who can resist the heavenly combination of sweet, ripe mangoes and creamy coconut sticky rice? Mango Sticky Rice is a classic Thai dessert that’s simple to make and utterly delicious. Let me show you how to make this delightful treat right at home.

First let’s talk mangoes. Did I mention mangoes are my absolute favorite.

Known for their sweet, juicy flesh and vibrant colors, mangoes are a cherished fruit in the islands, celebrated for their delicious taste and versatility in various dishes.

Mangoes were first introduced to Hawai’i in the early 19th century. Since then, the tropical climate and fertile soil of the islands have proven to be ideal for growing this fruit. Today, mango trees are commonly found in backyards, orchards, and farms across the state, thriving in the warm, sunny weather.

Mango Varieties in Hawai’i

Hawai’i is home to over 600l varieties of mangoes, each with its unique flavor profile and characteristics. Some of the most popular varieties include:

  • Haden: Known for its vibrant red and yellow skin, Haden mangoes are sweet and juicy with a slight tang. And also hands down my favorite!
  • Pirie: A smaller variety with a greenish-yellow skin, Pirie mangoes are incredibly sweet and fragrant.
  • Manzanillo: This variety has a golden-yellow skin and is prized for its rich, sweet flavor and smooth texture.
  • Rapoza: Developed in Hawai’i, Rapoza mangoes have a deep orange flesh and a sweet, mild taste.
  • Mapulehu: A unique Hawaiian variety, the Mapulehu has a long, slender shape and a distinct, slightly tart flavor.

Ingredients needed to make homemade mango sticky rice

  • Sweet Rice (Glutinous Rice): Provides the perfect chewy texture.
  • Coconut Milk: Adds creamy richness to the rice.
  • Sugar: Sweetens the coconut milk mixture.
  • Ripe Mangoes: The star of the dish, providing juicy sweetness.
  • Toasted Sesame Seeds or Mung Beans (optional): For a crunchy topping.

How to Make Mango Sticky Rice

1. Prepare the Sticky Rice: Rinse the rice until the water runs clear.

2. Cook the Rice: This can be done in a rice pot, on the stove, or by steaming.

3. Make the Coconut Sauce: In a saucepan, heat coconut milk and sugar until dissolved. Reserve ¼ cup of coconut sauce.

4. Mix Rice and Sauce: Combine the cooked rice with the reserved coconut sauce, letting it absorb.

5. Assemble: Serve the sticky rice with sliced mangoes and drizzle with the remaining coconut sauce. Sprinkle with toasted sesame seeds or mung beans if desired.

Tips for Making The Best Thai Mango Sticky Rice

  • Soak the Rice: Soaking the rice will get you the best texture.
  • Ripe Mangoes: Choose mangoes that are ripe but firm for the best flavor and texture.
  • Coconut Milk Quality: Use high-quality coconut milk for a richer taste. For a richer coconut flavor, use freshly squeezed coconut milk instead of canned.
  • Don’t overcook the rice – it should be slightly chewy, not mushy.
