Puto is a Filipino steamed rice cake. It’s a popular treat eaten alongside savory dishes or for dessert.

The traditional way to make puto is by soaking rice overnight, then grounding it into a dough, and steaming. Today we often use rice flour rather than soaking and grounding.

Puto is an umbrella term to describe the steamed rice cakes. There are many variations which also include different flavors like ube, pandan, vanilla, and chocolate.

This recipe takes traditional puto and allows you to make it in the Instant Pot. I absolutely love my Instant Pot. This is the one that I have.

What do I need to make Instant Pot puto?

What type of flour works best for puto?

As I mentioned earlier, puto is made from rice. Rice flour works well for this recipe. If you don’t have rice flour you can substitute cake flour. Cake flour is low in protein and therefore creates less gluten and makes a more light and airy puto.

You can also use all purpose flour, however your puto will be a little more dense as all purpose flour has a higher protein content and creates more gluten.

The Instant Pot will make this a little more dense than your traditional steamed puto.

Can puto be baked instead of steamed?

Baking the puto will give you a different texture than steaming. It will cook, but it won’t be the same.

How to store puto?

Once completely cooled, place in an airtight container in the fridge. It will keep for up to 3 days.

How to reheat puto?

I find it’s best to steam the puto again to reheat. You can also microwave the puto, but be sure to cover with a damp paper towel to keep the moisture in.

How to make Instant Pot puto?

To a medium size mixing bowl add the dry ingredients (flour, sugar, baking powder, salt). Whisk to combine.

In another mixing bowl add wet ingredients (water, milk, egg, oil, and vanilla). Whisk to combine.

Pour wet ingredients into the dry and whisk until well combined.

Spray puto molds with nonstick cooking spray and fill with batter. Cover molds with foil.

Add 1 cup water to the inner pot of the Instant Pot. Place puto mold on a trivet and place into the Instant Pot. Cover with the lid and set to sealing.

Cook on steam setting normal low pressure for 15 minutes. Quick release the valve when complete.

Allow puto to cool completely then remove from molds and ENJOY!
