Hummus Chicken
This easy baked hummus chicken uses Hawaiʻi ʻulu hummus to create juicy, tender chicken with a creamy, savory coating perfect for busy weeknights.
Ingredients
- 2 tablespoons olive oil
- 1½ pounds boneless skinless chicken thighs
- ½ teaspoon garlic salt
- ¼ teaspoon black pepper
- 1 cup hummus
- 1 teaspoon smoked paprika
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400°F.
- Lightly grease a 9x13-inch baking dish with olive oil.
- Pat the chicken dry with paper towels and place it in the prepared baking dish.
- Season with garlic salt and pepper.
- Spread the hummus mixture evenly over the top of each piece of chicken, making sure it's fully coated.
- Top with paprika and lemon juice.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F. If you'd like a little color on top, broil for the last 2-3 minutes.
- Let the chicken rest for 5 minutes before serving.
