How to melt chocolate?

Here in Hawai’i the weather is very humid and makes it a little more difficult when trying to melt chocolate. One trick that I have found that works well is to set your microwave to defrost. The idea is to melt the chocolate low and slow. Warm up chocolate in the microwave in 30 second intervals, stirring between each. Stop when chocolate is smooth.

You can also use a double boiler method. This is where you use two pots, the bottom pot filled with a shallow amount of water, then the second pot sits in the lower pot, being careful not to let the pot touch the water. The water is heated on the stove and the candy melts are placed in the upper pot to melt.

If your chocolate is too thick you can add paramount crystals or Crisco. I like to use paramount crystals as it melts easily into the chocolate and does not create lumps.

paramount crystals

What are paramount crystals?

Paramount crystals are shavings of hydrogenated palm oil and used to thin chocolate to a drip consistency.

Where can I find paramount crystals?

Your local baking or craft stores should carry this. You can also purchase online from Amazon.
