Chicken long rice is one of the ultimate comfort foods of Hawai’i. The classic Hawaiian recipe with simple flavors, juicy chicken, and yummy long rice made in the Instant Pot. This will be a regular on the dinner rotation.
With fall in full swing in Hawai’i and the weather’s cooling down (I know, I know nothing compared to the mainland and elsewhere) chicken long rice makes for a great warm me up type of dinner.

What is long rice?
Chicken long rice is a classic Hawaiian recipe made with shredded chicken, long rice noodles, and a salty broth. Long rice is also known as vermicelli, bean thread, cellophane or glass noodles. Interestingly enough the noodles aren’t often made from rice, but rather are made from mung bean starch and water and are pretty flavorless if eaten alone.
Where can you find long rice noodles?
You can find this in your local grocery store in Hawai’i. If you’re unable to find the noodles in your local grocery store, your local Asian specialty store should carry it and if all else fails you can find it on Amazon.
Is chicken long rice gluten free?
Pending on the ingredients you use, you can definitely make this recipe gluten free. Long rice noodles are gluten free. There are other gluten free noodles options here. Some types of shoyu are gluten free. Kikoman has a gluten free option.
How do you store chicken long rice?
Best storage option is in an airtight container in the fridge for a few days.
Can you freeze chicken long rice?
You betcha. Make a double batch and freeze the rest for a quick meal another day.
How to make chicken long rice?
Fill a medium mixing bowl with warm water. Place bean thread noodles in water and set aside.
Set Instant Pot to saute. Add chicken broth, ginger, garlic, chicken thighs, and shoyu. Close lid and set sealing. Cook on manual high pressure for 10 minutes. Allow 12 minutes natural pressure release. Remove chicken and shred with two forks. Return chicken to the Instant Pot.
Drain noodles and add to the Instant Pot. Close lid and set to sealing. Cook on manual high pressure for 2 minutes. Quick release when complete. Stir to combine. Garnish with green onions. Serve immediately.
Instant Pot Chicken Long Rice
Ingredients
- 1 package 10.56 ounces bean thread noodles
- 6 cups chicken broth
- 1 inch piece of ginger peeled and sliced
- 2 cloves of garlic diced
- 6 chicken thighs
- 1/4 cup shoyu
- Salt and pepper to taste
- 1 bunch green onions
Instructions
- Fill a medium mixing bowl with warm water. Place bean thread noodles in water and set aside.
- Set Instant Pot to saute. Add chicken broth, ginger, garlic, chicken thighs, and shoyu. Close lid and set sealing. Cook on manual high pressure for 10 minutes. Allow 12 minutes natural pressure release.
- Remove chicken and shred with two forks. Return chicken to the Instant Pot.
- Drain noodles and add to the Instant Pot. Close lid and set to sealing. Cook on manual high pressure for 2 minutes. Quick release when complete. Stir to combine. Garnish with green onions. Serve immediately.

Yes 2 minutes should be good for just the long rice noodles.
Hi! This looks great! When you freeze it, do you just put it in the bag and freeze? Anything special that you need to do to it? What about defrosting? Does it keep the flavor and moisture?
Hi great question. Two options: you can freeze it all together or you can separate the liquid and freeze separately. When defrosting you can place it in the fridge overnight, reheat on the store or in the microwave. The flavor keeps well. Thanks for stopping by.

Hi. I used boneless skinless thighs, however you can use any cut of chicken you’d like.

What kind of shoyu did you use? Kinkoman or aloha?
You can use any brand you like.
Can I do this recipe in the crock pot?
I’ve never tried it. I think you’d be able to cook the chicken down in the Crock Pot, but the noodles may have to be boiled and added separately. Let me know if you try it. Thanks.

When I set my Instant Pot to ‘Saute” it doesn’t allow for it go into pressure mode.
Is my Instant Pot too old for that function?
Aloha Paula. No. You need to hit cancel to stop saute mode the start the pressure cooking. Sorry that wasn’t clear. I’ll work on updating the recipe instructions. Setting it on saute just speeds up the heating time and shortening the wait. Thank you.

How long do you put in saute mode and saute chicken, etc before you start high pressure cook?
Aloha Zoe. I use the saute mode to heat up the pot so it doesn’t take as long to heat up. You can skip that step if you want. Mahalo.
I have a random question. I have left over cooked rotisserie chicken, could i somehow use it in the recipe? Lol I don’t want the chicken to go to waste and I have all the other ingredients on hand. Wutchu tink?
