Cheesy chicken breast, fresh basil, roasted tomatoes drizzled with tart balsamic. So so yummy. I saw this recipe for sheet pan caprese chicken a few years ago on Food Network’s site and decided to make it for my family. Low and behold, this is now a popular dinner rotation in our house.
Super simple to make, minimal ingredients, and of course every working mom’s favorite: easy clean up. All you need is one sheet pan. No fussing with prep bowls, mixing bowls, a ton of utensils. If you are the dishwasher in your house, you can thank me later.

What do I need to make caprese chicken?
5 ingredients, some spices, and oil. That’s it!
- Avocado oil
- Italian seasoning
- Salt and pepper
- Cherry tomatoes
- Chicken breast
- Balsamic vinegar
- Mozzarella cheese
- Basil leaves

How to store caprese chicken?
Place in an airtight container and store in the refrigerator for 3-4 days. Here’s a nice chart with all the info on food storage times.
Can you freeze caprese chicken?
Yes. Place in an airtight container and freeze for up to 2-3 months. I would not recommend freezing greens. You can add fresh greens when defrosting to eat again after freezing.
How make caprese chicken?
Preheat oven to 400F.
Pour avocado oil in to a rimmed baking sheet. Sprinkle on Italian seasoning, salt, and pepper.
Add tomatoes and shake pan to coat tomatoes. Move tomatoes to the edges of the pan.
Place chicken on pan and bake for 20-25 minutes or until the tomatoes start to burst.
While the chicken is baking start on the balsamic reduction. In a small sauce pan heat balsamic vinegar over medium high. Once boiling reduce heat to medium and simmer until thickened, about 5-7 minutes.
Once tomatoes have begun to burst, open oven and place one slice of mozzarella cheese on each chicken. Return to the oven and bake for another 5-7 minutes or until the cheese is melted and bubbly and chicken has reached an internal temperature of 165F.
Once cheese has melted, pour balsamic reduction over chicken.
Tear pieces of basil and sprinkle over chicken.
Cool slightly and enjoy!
