Why do you use chuck roast?
For one chuck roast is a cheap cut of meat. Unlike some of the other cuts of meat, chuck roast becomes very tender with longer cooking making it a perfect choice for this slow cooker meal.
What goes well with beef stew?
Here in Hawai’i just about everything goes well with a scoop or two of sticky white rice. I love this brand of RICE. Other favorites are sweet bread, mac salad, and good old poi (day old is even better).
How do I store beef stew?
Crock Pot beef stew keeps well in the fridge for 3-4 days. And I might add that day old beef stew tastes amazing the next day. Throw it in a pot and warm on the stove or in your in a rush just pop it in the microwave.
Can I freeze beef stew?
Yes! Make a double batch and freeze the leftovers in a zip top bag or storage container. You’ll thank me later. It will keep in the freezer for 3-4 months.
How to make Crock Pot beef stew?
Toss stew meat in flour and brown in a pan. Don’t have time for this extra step? You can add the stew meat straight to the Crockpot and it will cook down just fine. Add the beef stew packet of spices, water, beef broth, and tomato sauce to a mixing bowl and whisk to combine. Add peeled veggies to the bottom of the Crockpot. Then add the stew meat. Cover with the sauce. Cook on low for 8 hours or high for 4 hours.

Ingredients
- 2 pounds chuck roast cubed in to 1 inch pieces
- 6 carrots peeled and cut
- 3 potatoes cubed in to 1 inch pieces
- 3 celery stalks chopped
- 1 packet beef stew meat seasoning
- 1 1/2 cup beef broth
- 1 1/2 cup water
- 1 8 ounce can tomato sauce
Instructions
- Rinse veggies.
- Peel and cut carrots and potatoes.
- Cut celery stalks.
- In a mixing bowl add beef stew seasoning, beef broth, water, and tomato sauce. Whisk to combine.
- Layer carrots, potatoes, and celery in the bottom of a slow cooker.
- Add stew meat.
- Cover with beef stew sauce.
- Cook on high for 4 hours or low for 8 hours.

Aloha, have you tried this recipe in an Instant Pot? How would you modify it so the veggies don’t get overcooked?
Yes I have. I prefer the stove top or Crock Pot for this one, but you can definitely make it in the Instant Pot. Same recipe. Cook the beef first. Release the pressure. Then add the veggies at the end just for a minute or two depending on the size you cut the veggies. Hope this helps. Have a great day.
