I don’t know about you, but I’m a sucker for a good cookie with a slightly crispy edge and soft chewy centers. It’s the best of both worlds after all.

These cookies do just that. Along with warm spices and all the holiday baking feels. Get yourself a glass of milk and add these to your favorite cookie list.

What is cookie butter?

Cookie butter is a spread that has been made from ground up spice cookies. It has a creamy, rich consistency.

What can I do with cookie butter?

Well I’m glad you asked. You can totally spread it over some toast for a delicious start to your morning, but my favorite way to use it is in these cookie butter cookies.

Ingredients for this cookie butter cookie recipe

  • All purpose flour. I have not tried any other type of flour, but a gluten free alternative may work nicely here.
  • Cinnamon. Giving this recipe a little more warmth from spices.
  • Baking soda. This will help leaven the cookies and give it some rise.
  • Salt. Salt will help balance out the sweet and acts as a flavor enhancer.
  • Maika’i Organic Light Brown Sugar. This can be found at your local Foodland in the baking aisle.
  • Granulated sugar. Adding granulated sugar gives the cookies some of its brown color.
  • Unsalted butter. If using salted butter, omit the added salt previously mentioned.
  • Cookie butter. This can be found in the bread aisle next to the rest of the spreads.
  • Eggs. Eggs help with structure and leavening.
  • Vanilla extract. Make your own homemade vanilla or pick yourself up some from the store

How to make cookie butter cookies

  1. Pre heat oven and prepare your baking sheets.

2. Combine the dry ingredients

3. Cream the butter and sugar, then add the remainder of the wet ingredients.

4. Add the dry ingredients to the wet and mix to combine.

5. Scoop dough to form cookies and place on baking sheet.

6. Bake for 20-25 minutes or until golden brown.

7. Cool and ENJOY!

Tips for delicious cookie butter cookies

  • Use room temperature ingredients. This allows the ingredients to be incorporated together better.
  • Don’t skip creaming the butter and sugar. This step will help give your cookies structure by beating air into the butter.
  • Use a silicone mat or parchment paper to give your baking sheet a non-stick cooking surface.
  • Using a cookie scoop will give uniform sized cookies and an even bake time.
  • Allow cookies to cool slightly before removing from the baking sheet.

  • Cookie butter is made with spice cookies.
  • How to store?
  • Cookies are best kept at room temperature in an airtight container. These will keep for about a week.
  • Can you freeze the cookie dough?
  • You bet. I suggest rolling the dough into balls and then place in the freezer on a cookie sheet until slightly frozen. The  cookie dough balls can then be moved to a zip top bag or airtight container. This will keep for 6-9 months.
  • Can you bake frozen cookie dough?
  • You bet. Bake at the same temperature, however bake for about 2-3 minutes longer.

    • Preheat oven to 350F. Line two baking sheets with parchment paper or a silicone mate and set aside.
    • In a medium mixing bowl add flour, cinnamon, baking soda, and salt. Stir to combine and set aside.
    • In the bowl of a stand mixer add brown sugar, granulated sugar, and butter. Mix until well combined. Then add cookie butter and mix until well combined.
    • Next add eggs and vanilla. Mix until smooth.
    • Add dry ingredients to the bowl of the stand mixer and mix just until combined. 
    • Using a large cookie scoop, scoop out about 3 tablespoons of dough and place on the baking sheet. Be sure to leave about one inch between each cookie to allow the cookies space to rise, about 12 large cookies per baking sheet.
    • Bake for 20-25 minutes or until golden brown.
    • Transfer cookies to a wire rack to cool and ENJOY.

    2. I had heard about cookie butter but had never tried it. After ordering both creamy and the crunchy versions, I set out to find a recipe for something. my first choice was ice cream but alas, I didn’t have enough heavy cream. so searching I went until I came upon your cookie recipe. All I can say is… MY GOODNESS !!! they are my new favorite cookies. My husband couldn’t stop saying how great they are. Wonderful consistency and taste. Thank YOU !
