beef and broccoli ingredients
  • 1 pound flank steak
  • salt and pepper to taste
  • 3 tablespoons cornstarch, separated
  • 1/2 cup shoyu
  • 2 tablespoons brown sugar
  • 1 tablespoon oyster sauce
  • 2 teaspoons garlic, diced
  • 1 teaspoon ginger, diced
  • 1 large head of broccoli
  • 1/2 large round onion

What cut of beef should I use for beef broccoli?

Lean and tender cuts of beef work best for this. This includes flank, tri-tip, top round or sirloin.

How to prepare the beef?

Ideally you want to get your beef as tender as possible. A trick to help this along is to be sure to cut against the grain when trimming the beef into thin strips. This allows the beef to fray, cook down easier, and become more tender.

What does cornstarch do to beef?

Cornstarch acts as a coating to help prevent the beef from overcooking in the heat of the wok and toughening the meat. It also helps act as a thickener for the sauce. You could replace this with potato starch if you’d prefer.

Salt and sugar help enhance the flavors in this dish.

If you want a gluten free option you can swap out the shoyu for tamari.

How to cook the broccoli?

I prefer to blanch my broccoli before tossing it into the stir fry. This cuts down on the stir fry cook time and helps keep a good texture.
